SUPER Easy Stewed Veggies


Hello everyone! Thank you for visiting my blog! During my first year of pharmacy school I lived with my good friend, Sperry, who happens to be a fabulous cook! Lacking in cooking skills, we decided that she would teach me to cook and I would keep her informed on celebrity gossip. I learned so many fabulous things from her in the kitchen! One of them, was an easy way to make stewed vegetables. I decided to make them the other night, and what else, share the recipe with you guys! I hope you enjoy! 

Recipe: 

  • 1 can of stewed tomatoes
  • 1 can of diced tomatoes
  • Any veggies that you love! I used Zucchini, Red Potatoes, and Yellow Squash
  • Salt
  • Pepper
  • Water

Steps: 

1. 
After washing all of your chosen veggies, simply chop all of them into bite size (or just smaller size) pieces. 

2. 
After chopping all of your vegetables, add all of them to a large pot and season. I used salt and pepper. 

3. 
Next, add the can of stewed tomatoes and the can of diced tomatoes. Along with this, fill each empty can with water and add to the pot. 

4. 
Lastly, simmer the mixture of the lowest heat over the stove for 3 to 4 hours. I pretty much left this on the stove and would come back and occasionally stir the mixture. 

5. 
Add some to a bowl, and enjoy your delicious and healthy meal or snack! 

Another reason I love this recipe so much is that it is even tastier the next day! It keeps in the refrigerator really well and I simply heat it for around 30 minutes over the stove and can keep enjoying this meal for many days after I make it!
